Sausage Florentine

I came across this recipe a couple weeks ago when I made supper for the whole family. It was a new one but the ingredient list looked like a winner. Spinach, tomatoes, feta cheese and sausage over pasta. It comes together quite quickly, and with a few tweakings of the original recipe can be quite healthy. I love the flexibility of recipes like this. 

 Sausage Florentine (adapted from Jean Pare's Sausage, Spinach and Feta)
 (the first adaption had to be the name, something this tasty must have a more interesting name) 

Serves 4

1 1/4 lb farmer style sausage cut into 1/2 inch slices
1 T olive oil 
1 cup chopped red onion 
4 cloves minced garlic
4 cups fresh spinach leaves 
2 cups chopped tomatoes 
1 1/2 t dried basil 
1/2 c crumbled feta 

Fry sausage  in a bit of olive oil until cooked throughly, add onion and garlic. Cook until soft, adding more oil,  if needed.
 Add spinach, tomato and basil. Stir until spinach is slightly wilted. Add feta cheese, stir throughly to allow cheese to almost melt. Season with salt and freshly ground pepper. 

Serve immediately over pasta or rice.

  1. This looks delicious! We're having it tonight - the most expensive meal on my menu this month I think, but definitely the one I'm the most excited about!! :-D

  2. Looks yummy! Though I can only stand 'brand-new' (not aged 5 weeks in the fridge) feta cheese :-P
